Recipe Time

It's Monday, I don't have anything exciting to say besides funny kid stories, and they aren't going over nearly as well as I thought they would.

Instead, you're getting a recipe. Our dinner tonight to be exact.

John is all about comfort food. His favorites include Shepard's Pie, Meat Loaf, Chicken and Dumplings, Meat Pies etc.

Tonight, I convinced him to incorporate some veggies back into our daily lives (and no, I don't mean potatoes,

Johnny boy).

So tonight, I give you.....

Stir-Fried Chicken with Snow Peas



1 lb of Chicken, Pork, Tofu or Shrimp cut into thin strips (shrimp excluded)
4 oz baby corn on the cobs
1 tbsp peanut oil
1 garlic clove, finely chopped
1 inch piece of ginger root, cut into thin sticks
3 1/2 cups of Snow Peas
14 oz can of bamboo shoots
2 tsp soy sauce
2 tsp rice wine
4 tbsp veggie stock
2 tsp cornstarch
2 tbsp water
1 carrot, julienned
1-2 scallions, sliced

Marinade:
1 tbsp soy sauce
1 tbsp rice wine
2 tsp corn starch

1. Mix all marinade ingredients together in a dish, seasoning with pepper or Chinese five spice. Add Chicken and let chill for 20 minutes.

2. Heat half the oil in a wok and stir fry chicken until done. Set aside.

3. Add remaining oil and garlic and cook until golden. Add ginger, bamboo shoots, snow peas and stir fry for 3 minutes.

4. Add soy sauce, rice wine, veggie stock, and cook for 2-3 minutes. Mix the cornstarch and water, add to wok and stir until thickened.

5. Return chicken and juices to wok, and add corn. Cook until heated through. Garnish with scallions, and serve over rice or noodles.
