It is really hard! I totally agree. We gave my parents a beautiful set of Nambe candleticks, which they love. For Matt's parents, I made them a photo album of the wedding...after the fact. We just gave them a card and explained what they were getting, since our photography package only included one parents album (and it went to the set of parents who were actually paying for it!!). They were really pleased!
so i'm not married yet, but we did just decide on presents for our parents. we got them both the same thing. We bought them gift certificates for a bed and breakfast. in the note, we wrote "thought you might need this to relax after all the wedding planning". good luck, it's super hard to think of something good!!
I gave ours something that I knew they would use and enjoy. We gave them (both sets) a sterling silver 8x10 wedding frame that was engraved with our name and wedding date. Then, we gave them a picture of us once we got them developed. :) HTH!
We gave each set of parents a basket with a pair of cool wine glasses, a couple of bottles of wine (from MD to share our life out here), wine crackers, cheese spreads, and a cool wine stopper.

How about an overnight stay at a bed and breakfast?
We gave my parents a gift certificate for a weekend in the Poconos- a little getaway for them after all of the wedding craziness. They loved it.
