Ladies (and maybe gentleman), I made the BEST soup tonight.
It was super simple to make, super yummy to eat, and it's a weight watchers recipe. My husband doesn't like any soup, so I'll be taking this for lunch all week.
Broccoli-Cheese Soup (a.k.a. you will not be disappointed soup)
4 Servings, 4 WW Points
2tsp olive oil
1/2 cup minced onion
16 oz frozen chopped broccoli
2 14 oz cans of chicken broth
4 oz of Kraft Velveeta processed cheese product- cut into cubes
1/2 cup of fat-free skim milk
1/2 tsp garlic powder
1/2 cup water
1/4 cup cornstarch
Heat oil in a large saucepan over medium-high heat. Add onion and cook for 3 mins, until soft. Add broccoli and broth and bring to a boil; reduce heat to medium and simmer 3 mins, until broccoli is tender.
Reduce heat to low, add cheese and stir until cheese melts; stir in milk and garlic powder.
Whisk together water and cornstarch. Add mixture to the pan and simmer 2 minutes until thick. Serve hot. Yields 1.5 cups per serving.
